4 Light and Easy Recipes for a Summer Christmas

Christmas is coming up fast, but the traditional roast meal can be a bit too much in the summer heat. For those of you who’d like to say awake for backyard cricket in the afternoon, here are some easy-to-prepare recipes, perfect for summer entertaining.

1. Tropical Punch

Ice-cold, summery and refreshing, this punch is perfect for a grown-up Chrissy gathering.

Ingredients

1.5 litres pineapple juice, chilled
1.5 litres lemonade, chilled
1 1/3 cups vodka
1 1/3 cups white rum
7 passion fruits, halved
200g frozen raspberries
2 cups ice cubes

Method

Combine all ingredients in a jug or bowl and stir. Add ice just before serving.

2. Peach and Prosciutto Salad

This easy-to-prepare summer salad looks as amazing as it tastes- sure to be a winner with guests!

Peach and Prosciutto Salad

Ingredients

2 large peaches
100g Proscuitto
Rocket
Fresh Basil
100g whole mozzarella
Olive oil
Balsamic vinegar

Method

Halve, pit and slice peaches.
Tear prosciutto and mozzarella into bite-sized chunks.
Arrange the peaches, prosciutto and mozzarella over a bed of the greens.
Dress with the oil and vinegar.

3. Thai-Style Grilled Prawns

Prawns are an Aussie Christmas classic, and this quick and easy marinade takes them from average to awesome!

Thai Style Grilled Prawns

Ingredients

500g prawns
1-2 red thai chillies
1/2 cup corriander leaves
pinch white pepper
1/4 cup light soy sauce
1 tsp fish sauce
Juice of 1 lime
1 tbsp brown or palm sugar

Method

Combine all ingredients excepting the prawns in a large, lidded container.
Marinate prawns in the mixture for 1-2 hours in the fridge.
Grill prawns over med. heat.

4. Watermelon and Mint Salad

It might sound like a strange combination, but this summer salad is bright, colourful and delicious- an absolute winner!

Summer Christmas Watermelon Salad

Ingredients

1/2 med. sized watermelon
1/2 cup fresh mint leaves
Olive Oil
Juice of 1 lime

Method

Dice the watermelon half, removing the rind and white parts of the flesh.
Slice the mint leaves into narrow strips.
Combine all ingredients in a large serving bowl.
